Chocolate Chip Pudding Cookies

Preheat your oven to 375. 

In a mixing bowl, combine :
1 box of vanilla instant pudding
1 cup Bisquick baking mix
Cut in with a fork or a pastry blender 1/4 cup of shortening (Crisco)

In another bowl, lightly beat one egg and add 3 tablespoons of milk

Add egg mixture to pudding mixture.  If it's too dry, add a little more milk, 1 tablespoon at a time.

Add 1/2 cup of semisweet chocolate chips and stir to combine. 

The recipe says to drop the dough by rounded teaspoon onto an ungreased cookie sheet-- this will make bite-sized cookies.  I use a small scoop rather than a teaspoon so my cookies are 3 or 4 biters. 

Bake for 10-12 minutes.  Using scoop, yields about 18 cookies

These will not look like "regular" chocolate chip cookies.  They'll stay really poofy, they don't spread out.  When done they'll be high, rounded cookies with a yellowish color and a fluffy, cake-like interior.  They're much lighter than regular chocolate chip cookies.

Thanks! I'm always looking for new cookies to bake for Aaron. :) I've also got to bake 2 dozen for VBS next week - I think I'll try these!

Using a small scoop, a double batch makes about 20 cookies. Using the teaspoon, it would probably be double that, but you probably don't have to bake them as long.

Steve's reaction to these cookies was, "Seven years and *this* is the FIRST TIME you've made THESE!!!" followed by crumbs flying and cookies disappearing.

I didn't make them that night because I didn't have enough Bisquick. I was about a 1/4 cup short! I have all the ingredients now though! I have to make oatmeal tonight for church - maybe I'll try these too for us. Depends on how much baking I feel like doing.

Ok, so just after I join your WL community.... I'm making these cookies. I'm making the bitesize ones though thinking that one will be enough to satify my need for sweets. Bad, huh? Maybe I'll send the rest with B to work tomorrow. They love it when I feel the need to bake. ;)

I'm a big believer in allowing yourself some of the bad stuff. If I deny yourself too much, too often I end up bingeing and falling off the wagon. A little choc chip cookie every once in awhile won't kill you.

Just drink a big glass of water first so you'll feel a little full!

Yeah, I've been making myself chug water before I reach for a snack. Want a snack Lynn? Drink this water first. If you still want it - moderation.

I might get out of that group though. Honestly? I don't think I have the willpower to do much. Especially excercise. I'll look like a poser snopping, I'm afraid.
